How To Clean A Burnt Copper Chef Pan
My go to cleaner for burnt on crud, on anything, is to make a mixture of Cream of Tartar - the dry stuff you cook with, not the stuff you put on fish! :) - and vinegar. Make a paste, be careful, the Cream of Tartar is like powdered sugar, not much liquid is needed. Put the mixture on the burnt on crud, let it sit for a minute and wipe if off. On this pan, you might need one of those plastic scrubbies so you don't scratch it, or maybe a plastic putty knife. If the crud is thick, you may need to do it twice. The stains may be permanent:( Good luck and tell your friend be careful next time!:) Or, get his/her own darned pan! HA!

It's not crud. It's more like the oils that are baked on
Pennybrite paste cleaner is excellent for copper cookware as it doesn't leave any coating behind. A lot of other copper cleaners leave a residue that is meant to preserve the shine, but perhaps you don't want that in your food. If your hardware store doesn't carry it, or you can't find it online, make a paste of vinegar and salt and rub all over with your fingertips, then with a rag wetted w/vinegar. You'll see the discoloration disappear.

It's not real copper. It's like a Teflon coatings

Ahh, couldn't tell from photo. Then your best bet is a de-greaser product, usually sold at hardware stores. Then it would be a good idea to rub a coating of cooking oil on it as the de-greaser will strip it. What does the manufacturer say about cleaning it? They must be online...?
Is this real copper or a copper-colored finish? Won't vinegar cause verdigris on copper?

vinegar didn't Do anything
A lot of bad reviews. More videos if you click on the link.
Its a copper ceramic coating. Did you season the pan first with oil in the oven? This may be why something stuck to it. I just put in the sink and put hot water with dish soap, let sit for awhile, then come back with a sponge with the green scrubby side and some soap it usually gets it off. Once you get it clean, I would re-season it.

You don't have to season it. I have othe pans with no problem.
My friend lays tin foil over the pan and bakes items but doesn't wash it so the oils 🤷♀️Build up. Soaking didn't do anything

My pan came with a sticker with directions to season. I did and had no problems. I brought the pan for 3 of my clients. Only the one who did not season his have problems with stuff sticking to it.
I also found out the hard way that spray oil also causes sticking.
USE EQUAL PARTS OF VINGER AND BAKING SODA IT WILL ALMOST CLEAN IT SELF BUT USE A WHITE TOWEL NOT PAPER LIGHTLY COAT COPPER THAN WIPE DOWN WITH ANOTHER WHITE TOWEL AGAIN NO PAPER USE A FOAM PAINT BRUSH THIS WILL HELP AND IF YOU HAVE TO DO BOTH SIDE
I don't know how it will work in this case. Love Fabric Softener Sheets. Irons with yuck on plate, heat up the iron and iron a softener sheet till it all comes off on the sheet. Baking racks with baked on yuck, lay sheets on the bottom of the tub and put the racks on top of the sheets. Put hot water in the tub to about 1 or 2 inches over the racks and let sit overnight. The next day rub them down with a scouring cloth. I would try the same as the baking racks with that flat pan in the sink or tub. Good Luck.
Try rubbing with ketchup!

I have copper bottom pans and only use vinegar and salt to clean them. Works like a charm. My grandparents also did this years ago. My pots are 30 years old and look like new.

Julie on Dec 18, 2017 Being a copper chef baking sheet seems to be why this tried n true remedy isnt working for her as well as the copper chef is not the same type of copper used on the bottom of regular copper cookware. My sister managed to do about the same thing to one of those copper fry pans...she scrubbed til she couldnt scrub anymore...then she cooked in it again and the discoloration managed to undo itself...probably the reheating of the pan released it.

Boil them with barkeeper medium hot let it boil for sometime let it dry and check if the burned thing stars getting like ashes clean them and put it again to boil if you do not have barkeeper use wood ashes they are magic even for your other pots they will be shining if you do not have ashes or barkeeper use Ajax or commet I am proffetional cleaner it will work without causing damage to your pots. After they are clean season again peel two bananas and scrub the inside side on the pots walls and boil with water and oil.
on my new copper cook ware by that Cathy woman I use a magic eraser and it looks new again.
i do believe you can use tarnex on it, just wash it very good after word
Maybe those Mr. Clean eraser sponges will work. I get mine at the Dollar Tree. They're not Mr. Clean, but they work just as well.

lemon juice and salt? or Lemon juice and baking soda. Make a paste, work onto the copper, and rinse well.
MAKE A PASTE OF VINGER AND BAKING SODA FOAM BRUSH IT ON AND MAKE THE WATER VERY HOT AND IT SHOULD REMOVE AND WIPE IT OUT WIT A WHITE TOWEL NOT PAPER AND RINSE WITH HOT HOT WATER. TRY IT AGAIN AND WHY IT DIDN'T WORK? JAMES ALSO TRY LEMON AND LET IT SIT OVER NIGHT FOR BOTH OR TRY OCTOGONE SOAP THE BROWN . GOOD LUCK
Did you ever find anything that cleaned it? I have the same problem
I am having the same problem and wondered if you found a solution
